History

Prada wanted to immerse himself in this complex scenario during that period in which no one was interested in authentic, traditional methods. He was warned of the risks, but he remained undaunted.

His venture into the traditional methods of preserving the excellent produce from the orchards of El Bierzo instantly gained the respect and admiration resulting from integrity and hard work. This was good, better. It may well be possible to roast peppers in industrial ovens and in large canneries, but... they will never taste like the ones you prepare for your own home, for your family.

This was the industrial method adopted by Prada in 1972. There was nothing to invent. Everything was in place. One simply needed to respect the traditional process, the importance of experience, the fire, the hot coals, accurate turning, the wisdom of women celebrating the fruitfulness of the harvest... lovingly attending to the task... in the old way... and with great delight.
